Bourbon Bacon Jam

This recipe is so easy to make and will have you slathering this Bourbon Bacon Jam on everything in sight ... especially Southern Recipe Pork Rinds!

Ingredients

    Bourbon Bacon Jam:

    • 1.5 lbs. Bacon, cooked and diced
    • 2 cups Shallots, finely chopped
    • 1 cup Vidalia onion or any sweet onion, finely chopped
    • 4 garlic cloves, minced
    • 1 tsp. Chili powder
    • 1/2 tsp. Smoked paprika
    • 1/2 cup Bourbon
    • 1/2 cup Maple syrup
    • 1/4 cup Balsamic vinegar
    • 1/2 cup Brown sugar
    1 bag Southern Recipe Pork Rinds, for dipping

Preparation

1. Fry the bacon in two frying pans over medium heat until browned and crisp, with as little visible fat as possible.

2. Transfer bacon to paper towels to drain excess fat.

3. Leave about 1 to 2 tablespoons of the fat in one of the pans.

4. Add shallot and onion to the pan and cook over medium heat until caramelized.

5. Add garlic and cook for 2 minutes.

6. Stir in chili powder and smoked paprika until combined.

7. Increase heat to high and carefully add the bourbon and maple syrup.

8. Bring to a boil, stirring and scraping the pan to loosen any browned bits. Boil for 3 minutes.

9. Add vinegar and brown sugar. Continue to boil for 4 more minutes.

10. Cut or tear the cooked bacon into small pieces.

11. Add bacon to the pan, reduce heat to low, and simmer for 10 minutes, stirring occasionally, until mixture thickens and becomes jam-like.

12. Serve with Southern Recipe Pork Rinds, over warm bread, or transfer to jars and store in the fridge.
