Breakfast Tacos - Eggs and Pork Rinds

Start your day off right with a hearty breakfast that has the bacon flavor of Southern Recipe Pork Rinds and the spice of chorizo and jalapeño peppers!

Ingredients

    Breakfast Tacos - Eggs and Pork Rinds:

    • 7 oz Southern Recipe Pork Rinds
    • 3 tsp. Oil
    • 8-10 Eggs, beaten lightly
    • 2 Tbsp. Onion, chopped
    • 2 Chorizos
    • 1/2 Tomatoes, chopped
    • 4 tsp. Cilantro, chopped
    • 2 cups Hot water
    • Salt to taste
    • Pickled jalapenos or hot sauce to garnish eggs
    • Flour tortillas or taco shells, warm (10-15 small)

Preparation

1. Sauté onions in oil until transparent.

2. Discard casing from chorizo.

3. Add chorizo to tomatoes and onions, breaking it up with a fork as it cooks.

4. Soak pork rinds and cilantro in hot water until pork rinds are soft and tender (about 1–2 minutes).

5. Drain the pork rinds.

6. Add drained pork rinds to the onion and chorizo mixture.

7. Lightly beat eggs and add to the mixture, scrambling them.

8. To serve, place a heaping tablespoon or more of the mixture in the center of each hot flour tortilla.

9. Add jalapeños or hot sauce to taste.

10. Roll up the tortilla like a taco and enjoy.
