Chicken, cheese and pork rind quesadilla

Ingredients

    Southern Recipe Chicharrones Quesadillas:

    • 1 bag Southern Recipe Pork Rinds, crushed
    • 20 Tortillas
    • 2 Green tomatoes, peeled
    • 1 Tomato, chopped
    • 1/4 Onion, diced
    • 3 bunches Cilantro, chopped
    • 1/2 cup Crumbled Oaxaca cheese
    • Salt and pepper to taste
    • Oil

Preparation

1. Heat a small amount of oil in a skillet.

2. Fry onions and tomatoes until tender.

3. Add salt and pepper to taste.

4. Add pork rinds (chicharrones) and cilantro; cook for 5 minutes.

5. Heat tortillas and fill each with the pork rind mixture and cheese.

6. Fold the tortillas and lightly fry in oil until golden.

7. Remove and drain excess oil on paper towels.

8. Serve warm.
