
Crunchy Cream Cheese Rolls

Ingredients
- Crunchy Cream Cheese Rolls:
• 2 cups Southern Recipe Pork Rinds, crushed
• 1/2 lb. Cream cheese, at room temperature
• 1 Avocado, ripen
• 2 Tbsp. Cilantro, chopped
• 1 Tbsp. Onion, finely chopped
• 1 Serrano chile, finely chopped
• 1/4 tsp. Fresh lime juice
• Salt to taste
Preparation
1. Place cream cheese between two sheets of parchment paper.
2. Using a rolling pin, roll the cream cheese into a rectangle about 6 inches by 8 inches and 1/2 inch thick.
3. Remove the top sheet of parchment paper.
4. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
5. Mash the avocado until mostly smooth, leaving some small chunks for texture.
6. Stir in cilantro, onion, chile, lime juice, and salt.
7. Spread the avocado mixture evenly over the cream cheese.
8. Using the bottom sheet of parchment paper, roll up the cream cheese into a log.
9. Coat the roll completely with crushed chicharrones.
10. Cover lightly with plastic wrap and chill in the refrigerator for 15 minutes before serving with crackers.
11. The roll can be made in advance and refrigerated for 6–8 hours.
12. Before serving, set out at room temperature for 30 minutes.
