
Pork Rind Eggplant Parmesan

Ingredients
- Pork Rind Eggplant Parmesan:
• 1/2 cup Southern Recipe Hot & Spicy Pork Rinds, finely crushed
• 1 lb extra-lean ground beef
• 4 Tbsp. olive oil, divided
• 2 Tbsp. white onion, diced or grated
• Garlic to taste
• 1 Tbsp. black pepper
• 2 large eggplants
• 3 large eggs, lightly beaten
• 1 cup wheat flour
• 1 cup grated Parmesan cheese, divided
• 16 oz. Italian sauce
• 2 cups mozzarella cheese, shredded
Preparation
1. Peel eggplant and cut into 1/4-inch slices.
2. Place slices in a deep bowl and submerge with cool water.
3. Let sit for 5 minutes, then drain and rinse.
4. Cover again with fresh water and set aside for 10 minutes.
5. Meanwhile, cook ground beef in a skillet with 2 tablespoons olive oil, black pepper, grated onion, and garlic.
6. Remove beef from skillet and set aside.
7. In a medium bowl, combine flour, crushed pork rinds, and 1/4 cup Parmesan cheese.
8. Preheat oven to 400°F.
9. Dry eggplant slices completely on paper towels.
10. Prepare 2 baking sheets with a fine coating of remaining olive oil.
11. Dip each eggplant slice into beaten egg, then coat with the flour mixture.
12. Place coated slices on baking sheets.
13. Bake for 10 to 15 minutes, then turn slices and bake an additional 7 minutes.
14. Repeat until all eggplant slices are baked and browned.
15. Reduce oven temperature to 350°F.
16. Lightly grease a 13x9x2-inch baking dish with oil.
17. Cover bottom of dish with ground beef mixture.
18. Layer browned eggplant slices over beef, then add sauce and Parmesan cheese.
19. Repeat layers until all eggplant and sauce are used.
20. Top with shredded mozzarella cheese.
21. Bake at 350°F for 30 minutes or until thoroughly heated and cheese is melted, bubbly, and lightly browned.
22. Serve warm.
