
Pork Rind Fried Catfish

Ingredients
- Pork Rind Fried Catfish:
• 1 cup Southern Recipe Original Pork Rinds, finely ground
• 1 large Lemon
• 1/4 cup Milk
• 2 Eggs, beaten
• 2 Tbsp. Fresh rosemary, chopped
• 2 Tbsp. minced fresh garlic
• 4 (4 oz) Catfish fillets
• 1 cup Yellow cornmeal
• 1/4 cup Extra-virgin olive oil
Preparation
1. Grate lemon rind into a large bowl, avoiding the bitter white pith.
2. Squeeze lemon juice into the bowl.
3. Stir in milk and the next 3 ingredients until blended.
4. Rinse fillets and pat dry with paper towels.
5. Add fillets to the lemon mixture, cover, and chill for 1 hour.
6. Place cornmeal and crushed pork rinds on a large plate or shallow dish.
7. Turn fillets in the lemon mixture to coat thoroughly.
8. Dredge fillets in the cornmeal and pork rind mixture, coating evenly.
9. Heat oil in a skillet over medium-high heat.
10. Cook fillets for 4 minutes on each side or until browned.
11. Remove from skillet and serve warm.
