Crisp, tangy green tomato slices coated in crunchy Southern-style pork rinds for a bold, flavorful twist on a classic fried favorite.
Ingredients
- Pork Rind Coated Fried Green Tomatoes:
• 1/4 cup Southern Recipe Original Pork Rinds, crushed
• 1 Egg, lightly beaten
• 1/2 cup Buttermilk
• 1/2 cup Self-rising cornmeal mix
• 1/2 tsp. Salt
• 1/2 tsp. Pepper
• 1/4 cup Flour
• 3 medium-size Green tomatoes, cut into 1/3-inch-thick slices (about 1 1/4 lb.)
• Vegetable oil
Preparation
1. Whisk together egg and buttermilk.
2. In a shallow dish, combine cornmeal mix, salt, pepper, and 1/4 cup finely ground pork rinds.
3. Dredge tomato slices in the remaining 1/4 cup flour.
4. Dip floured tomato slices into the egg mixture.
5. Dredge the slices in the cornmeal and pork rind mixture.
6. Pour oil to a depth of 1/2 inch in a large cast-iron skillet.
7. Heat oil to 375 °F over medium-high heat.
8. Drop tomatoes into the hot oil in batches.
9. Cook for 2 minutes on each side or until golden brown.
10. Drain on paper towels.
11. Sprinkle hot fried tomatoes with salt to taste.
12. Serve warm.
