Ingredients
- Sticky Cajun BBQ Pork Ribs with Buttered Pork Rinds:
• 1 bag Southern Recipe Pork Rinds
• 1/2 rack Baby back pork ribs
• 1/4 cup Chinese five spices
• 1/4 cup Chicken broth
• 1/4 Tbsp. Chili powder
• 1/2 cup Ketchup
• 4 Tbsp. Honey
• 2 Tbsp. Molasses
• 3 Tbsp. Butter
• 1/2 cup Sweet onions, chopped fine
• 1 cup Hickory barbecue sauce
• 1/2 cup Unsalted butter
• 1 cup Olive oil
• 1 Tbsp. Ground cinnamon
• 4 Tbsp. Grape jelly
• 5 Tbsp. Black pepper
• 2 Tbsp. Garlic powder
• 2 Tbsp. Kosher salt
• 1 Tbsp. Ground cumin
• 1/4 cup Apple cider
• 1/4 cup Pomegranate juice
• 2 Tbsp. Onion powder
• 4 Tbsp. Cajun hot sauce
Preparation
Making Sticky Cajun BBQ Sauce:
1. Heat a medium saucepan over high heat and melt butter with onions.
2. Stir in chicken broth, grape jelly, ketchup, honey, molasses, hickory BBQ sauce, apple cider, hot sauce, and pomegranate juice.
3. Cook for 15 minutes, whisking occasionally.
4. Lower heat, cover, and simmer for 10 minutes.
5. Remove from heat and set aside.
Marinate Ribs:
6. Rinse ribs with clean water and pat dry with paper towels.
7. Pat dry rub seasonings (Chinese five spice, garlic powder, chili powder, cinnamon, kosher salt, black pepper, onion powder, and cumin) onto both sides of ribs.
8. Place two 14-inch layers of aluminum foil onto a toaster oven broiler pan or grill grates.
9. Brush a generous layer of olive oil on the top layer of foil.
10. Lay ribs bone side out, meaty side down onto foil.
11. Cover ribs with two more 14-inch layers of foil and seal edges tightly.
Cook Ribs:
12. Place ribs in toaster oven and bake for 1 hour or grill for 1 hour.
13. Remove ribs, apply BBQ sauce evenly over ribs.
14. Reseal foil and return ribs to oven or grill.
15. Continue cooking for 30 minutes, rotating and turning ribs halfway.
16. Cook for another 30 minutes in toaster oven or 45 minutes on grill.
17. After a total of 2 hours cooking, remove ribs, rotate and turn, brush on more BBQ sauce.
18. Return ribs to oven unsealed and heat for 10 more minutes.
19. Remove ribs from oven and allow to cool for 7 minutes.
20. Serve ribs with a bowl of Southern Recipe Pork Rinds topped with melted unsalted butter.
