Sweet Georgia Salsa

For the rind lover that likes it sweet ... southern-style. This salsa recipe goes great with sweet tea or something even stronger! Try Southern Recipe BBQ Pork Rinds and make it tangy.

Ingredients

    Sweet Georgia Salsa:

    • 1 Yellow onion, chopped
    • 6 lb. Tomatoes, peeled and chopped
    • 2 Banana peppers, chopped
    • 3 Green bell peppers, chopped
    • 3 cans (6 oz.) Tomato paste
    • 1/2 cup White vinegar
    • 2 Tbsp. Garlic powder
    • 1 1/2 Tbsp. Salt
    • 1 Tbsp. Cayenne pepper
    • 1 1/2 tsp. Ground cumin
    • 1/4 cup Brown sugar
    • 1/4 cup Sugar
    • 8 pint canning jars with lids and rings

Preparation

1. Combine red onion, white onion, yellow onion, tomatoes, banana peppers, green peppers, tomato paste, white vinegar, garlic powder, salt, cayenne pepper, cumin, brown sugar, and white sugar in a large pot.

2. Simmer the mixture until thick, about 3 hours.

3. Sterilize jars and lids in boiling water for at least 5 minutes.

4. Pack the hot salsa into sterilized jars, filling to within 1/4 inch of the top.

5. Run a knife or thin spatula around the inside of each jar to remove air bubbles.

6. Wipe the rims of jars with a moist paper towel to remove food residue.

7. Place lids on jars and screw on rings.

8. Place a rack in the bottom of a large stockpot and fill halfway with water.

9. Bring water to a boil over high heat.

10. Carefully lower jars into the pot, keeping 2 inches of space between jars.

11. Add boiling water if needed so water is at least 1 inch above jar tops.

12. Bring to a full boil, cover, and process for 10 to 15 minutes.

13. Remove jars and place on a cloth-covered or wood surface, several inches apart, until cool.

14. Once cool, press the center of each lid to ensure a tight seal (no up or down movement).

15. Refrigerate after opening.

16. Serve salsa with Southern Recipe Sweet BBQ Pork Rinds.
