Authentic flavor of Mexican cuisine, featuring chicharrones
Ingredients
- Authentic Pozole with Pork Rinds:
• 1 bag Southern Recipe Pork Rinds
• 36 oz hominy
• 3 avocados
• Sliced radishes, to taste
• Onion, to taste, finely chopped
• Tostadas
• Oregano, to taste
• Lettuce
• Salt and ground arbol chile pepper, to taste
• 2 bunches epazote (Mexican tea)
• Topped with Radish
Preparation
1. Cover hominy with water and cook for 30 minutes.
2. Remove from heat, cool slightly, and uncover.
3. Add salt and ground chile.
4. Return to heat and cook for an additional 15 minutes.
5. When the hominy begins to open, add chicharron and epazote.
6. Cook for another 15 minutes.
7. Serve hot.
8. Accompany with chopped lettuce, radishes, onion, oregano, lime, avocado, and tostadas.
