BBQ Balls of Fire

Goodness, gracious ... great pork rind taste!

Ingredients

    BBQ Balls of Fire:

    • 1 1/2 bags of Southern Recipe Pork Rinds, crushed
    • 2 lbs. Italian sausage
    • 2 White onions, medium
    • 1/2 cup Ketchup
    • 1/2 cup Green pepper, finely diced
    • 1 tsp. Garlic, crushed
    • Salt and pepper to taste
    • 1 tsp. Worcestershire sauce

Preparation

1. Peel a white onion and split it down the middle into two equal halves.

2. Mix all ingredients (except the white onions) together in a large mixing bowl.

3. Roll the mixture into tightly formed balls.

4. Place the rolled meatballs into one half of the sliced onion.

5. Place the other onion half on top and lightly squeeze together. Discard remaining onion peels.

6. Wrap the onion and meatball package tightly in foil and seal.

7. Bake at 350°F for 25–30 minutes, or until the meat is cooked through.

8. Remove from oven and unwrap carefully.

9. Sprinkle additional BBQ pork rinds over the top before serving.

10. Serve hot.
