BBQ Pork Rind Cornbread

Ingredients

    BBQ Pork Rind Cornbread:

    • 1 cup Southern Recipe Cracklins, crumbled
    • 1 cup Southern Recipe Pork Rinds, crushed
    • 1/4 cup all-purpose flour
    • 1 1/2 cup yellow or white cornmeal
    • 1/2 tsp. baking soda
    • 1/4 tsp. salt
    • 1 cup creamed corn
    • 1 beaten egg, room temperature
    • 1 Tbsp. BBQ seasoning

Preparation

1. Preheat oven to 400°F.

2. In a bowl, combine flour, cornmeal, baking soda, salt, and creamed corn.

3. Stir in Cracklins and the egg until thoroughly blended.

4. Pour batter into a medium-size baking pan (8 1/2" by 4 1/2"), greased if not using a nonstick pan.

5. Use a rubber spatula to smooth the surface.

6. Crush 1 cup pork rinds and mix with 1 tablespoon BBQ seasoning.

7. Bake cornbread for 20 minutes.

8. Sprinkle the pork rind mixture evenly over the top.

9. Bake for an additional 10 minutes to crisp the topping.

10. Bake total of 30 minutes until well browned.

11. Serve warm, pairs well with Hot & Spicy Pork Rind Chicken Wings.
