Ingredients

    Cheesy Pork Rind Mashed Potato Ring:

    • 1 cup Southern Recipe Pork Rinds (any flavor), crushed
    • 3 cups Mashed potatoes
    • 2 Egg yolks
    • 1/2 cup Green onions, chopped
    • 1/2 cup Bacon, cooked and chopped
    • 1/2 cup Cheddar cheese, shredded
    • 2 Tbsp. Chives, chopped, plus more for garnish
    • 4 large Onions, peeled and cut into rings
    • 1 1/2 cup Mozzarella cheese, shredded
    • 3 cups Vegetable oil
    • 3 Eggs, beaten
    • 1 cup flour
    • 1 cup Breadcrumbs
    • 1 tsp. Garlic powder

Preparation

1. In a large mixing bowl, mix mashed potatoes, eggs, green onions, bacon, cheddar, and chives until well incorporated.

2. Take 2-inch scoops of the loaded mashed potatoes and press them into onion ring slices, creating an indentation in the center.

3. Fill the indentation with mozzarella cheese, then cover with more mashed potato mixture.

4. Press the potatoes firmly into the onion rings to hold their shape.

5. Repeat with all onion slices and mashed potatoes, then chill for 1 hour.

6. In a fry cooker, heat vegetable oil to 400°F.

7. In a medium bowl, mix crushed pork rinds and breadcrumbs.

8. While the oil is heating, coat each potato ring in flour, then dip in egg, and finally coat with the breading mixture.

9. Fry in batches for about 3 minutes on each side, or until golden brown.

10. Top ranch dressing with fresh chives and serve as a dip.
