Chicharron with Potatoes

Ingredients
- Chicharron with Potatoes:
• 1 bag Southern Recipe Pork Rinds, crushed
• 4 Cambray potatoes, quartered
• 2 Tomatoes, finely chopped
• 1 Onion, finely sliced
• 3 Serrano peppers, sliced
• Oil for cooking
• 1/2 cup Water
• Salt to taste
Preparation
1. Brown potatoes and onion in a small amount of oil for 2 minutes.
2. Add tomatoes to the pan.
3. If the mixture is dry, add a little water.
4. Add chicharron gradually, a little at a time.
5. Gently fold in peppers.
6. Season to taste.
7. Serve warm.
