Chicken & Waffles with Pork Rinds

Ingredients
- Chicken & Waffles with Pork Rinds:
• 1 bag Southern Recipe Pork Rinds, crushed
• 4 Chicken thighs
• 1 quart Buttermilk
For Waffles
• 1 bag Southern Recipe Pork Rinds, crushed
• 2/3 cup Mozzarella, shredded
• 2 Eggs
Preparation
For Chicken:
1. Marinate chicken in buttermilk for 2 hours in the refrigerator.
2. Crush your favorite pork rinds into a fine coating and add to a zip-top bag.
3. Remove chicken from the marinade and place in the bag with crushed pork rinds.
4. Shake to coat the chicken liberally.
5. Air fry at 350°F for 18 minutes, or until chicken is cooked through and crispy.
For Waffles:
6. Preheat and grease a waffle iron.
7. Beat eggs in a bowl.
8. Mix in crushed pork rinds and shredded mozzarella. Stir well.
9. Pour the mixture into the waffle maker.
10. Cook until golden and done.
11. Serve chicken and waffles hot.
