Cracklin Corn Bread

Ingredients
- Cracklin Corn Bread:
• 1 cup Southern Recipe Cracklins
• 1/4 cup All-purpose flour
• 1 1/2 cup Yellow or white cornmeal
• 1/2 tsp. Baking soda
• 1/4 tsp. Salt
• 1 cup Sour milk or buttermilk
• 1 Egg, room temperature and beaten
Preparation
1. Preheat oven to 400°F.
2. In a bowl, combine flour, cornmeal, baking soda, salt, and sour milk or buttermilk.
3. Stir in cracklins and egg.
4. Blend thoroughly.
5. Pour batter into a medium-size baking pan (8 1/2 x 4 1/2 inches), greased if not using a nonstick pan.
6. Use a rubber spatula to smooth the surface.
7. Bake for 30 minutes, or until well browned.
8. If using a glass pan, reduce oven temperature by 25°F.
9. Serve warm for best flavor.
10. To reheat frozen cornbread, bake at 300°F for 15 minutes before serving.
