Ingredients

    No Bakin' Lemon Cheesecake:

    Crust
    • 4 oz Southern Recipe Pork Rinds, crushed
    • 1/2 stick Butter, melted
    • 1 tsp. Cinnamon
    • 1/4 tsp. Cloves, ground
    • 2 cups Sugar

    Filling
    • 1/2 pkg. Lemon Jello® (small box)
    • 1 1/2 cups Heavy cream
    • 8 oz Cream cheese, room temperature
    • 1/2 cup Sugar
    • 1/2 tsp. Vanilla

Preparation

1. Combine all ingredients for the pork rind crust and press into a pie tin.

2. Refrigerate the crust while preparing the filling.

3. Dissolve Jello® in 1/2 cup boiling water and set aside to cool.

4. Whip 1 1/2 cups heavy cream until stiff peaks form.

5. In a clean bowl, whip cream cheese until fluffy.

6. Add sugar, cooled Jello®, and vanilla to the cream cheese. Mix well.

7. Gently fold in the whipped cream.

8. Pour the filling into the prepared crust.

9. Refrigerate overnight or until set.

10. Serve chilled.
