

Pork Rind Coated Fried Pork Chops

Ingredients
- Pork Rind Coated Fried Pork Chops:
• 1/2 cup Southern Recipe Original Pork Rinds, finely ground
• 1/2 cup All-purpose flour
• 1 tsp. Cajun seasoning
• 1/4 tsp. Garlic powder
• 1/4 tsp. Pepper
• 8 (4 oz) Boneless center-cut pork chops
• 1 cup Nonfat buttermilk
• Vegetable Cooking Spray
• 3 Tbsp. Vegetable oil
• 1 cup Fat-free milk
• 1/4 tsp. Salt
Preparation
1. Reserve 2 tablespoons of flour and set aside.
2. Place the remaining flour and crushed pork rinds in a shallow dish.
3. In a small bowl, combine Cajun seasoning, garlic powder, and pepper.
4. Rub the pork chops evenly on both sides with the seasoning mixture.
5. Dip each pork chop in buttermilk.
6. Dredge the pork chops in the flour and pork rind mixture.
7. Lightly coat both sides of the pork chops with cooking spray.
8. In a large heavy skillet, heat oil over medium-high heat.
9. Cook pork chops in batches for 5 minutes on each side, or until golden brown.
10. Drain cooked pork chops on paper towels.
11. Add the reserved 2 tablespoons of flour to the pan drippings in the skillet.
12. Stir in milk and salt; cook, stirring constantly, until thickened and bubbly.
13. Serve pork chops immediately, topped with the gravy.
14. Garnish as desired.
