

Pork Rind Coated Sauerkraut Balls

Nothing sauer about this recipe! Mix up sauerkraut, cream cheese and roll the mixture into – you got it – balls.
Ingredients
- Pork Rind Coated Sauerkraut Balls:
• 3 cups Southern Recipe Hot & Spicy Pork Rinds, finely crushed
• 1 can (14 oz.) sauerkraut
• 8 oz. cream cheese
• mustard for dipping (optional)
Preparation
1. Remove cream cheese and sauerkraut from the refrigerator and allow them to reach room temperature.
2. Drain the sauerkraut well.
3. In a large bowl, combine 1/2 cup of crushed pork rinds, cream cheese, and sauerkraut. Mix well.
4. Cover the bowl with plastic wrap and refrigerate for 4 hours.
5. Preheat the oven to 350°F.
6. Form small balls from the cooled mixture with your hands.
7. Roll each ball in the remaining crushed pork rinds.
8. Place on a greased baking sheet with at least 2 inches between each ball.
9. Bake for 15 minutes, or until golden brown.
10. Serve warm.
