Pork Rind Encrusted Mushrooms

Ingredients

    Pork Rind Encrusted Mushrooms:

    • 1 bag (4 oz) Southern Recipe Pork Rinds, crushed
    • 20 medium-sized Mushrooms
    • 5 Tbsp. Butter
    • 2 Tbsp. Onion, finely chopped
    • 1/8 tsp. Pepper
    • 1/2 cup Bread crumbs
    • Paprika for a topper
    • Parsley sprigs as garnish

Preparation

1. Wash mushrooms under running water and drain on paper towels.

2. Remove stems and chop them finely.

3. Grind pork rinds using the fine blade of a food grinder.

4. Melt 3 tablespoons butter in a small skillet.

5. Add chopped onion and chopped mushroom stems to the melted butter and sauté until onion is transparent and mushrooms release their juice.

6. Add ground pork rinds and pepper to the skillet. Mix thoroughly until moistened.

7. Fill mushroom caps with the mixture.

8. Melt remaining butter in a skillet and add bread crumbs. Mix together.

9. Dip filled mushrooms into the buttered bread crumbs.

10. Place mushrooms in a 9-inch pie pan.

11. Bake at 350°F for 15 minutes.

12. Dust with paprika and garnish with parsley sprigs before serving.
