

Pork Rind Fried Shrimp

Ingredients
- Pork Rind Fried Shrimp:
• 2 Tbsp. Southern Recipe Hot & Spicy Pork Rinds, finely ground
• 3 lbs large Raw shrimp, unpeeled
• 2 cups Milk
• 1 Egg
• 1 Tbsp. Yellow mustard
• 1 tsp. Cajun seasoning
• 1 (12 oz.) package Fish fry mix
• 1 Tbsp. Cajun seasoning
• Vegetable oil
• Remoulade Sauce
Preparation
1. Peel shrimp, leaving tails on.
2. Butterfly each shrimp by making a deep slit down the back from the large end to the tail, cutting to but not through the inside curve.
3. Devein the shrimp and place them in a large bowl.
4. Whisk together milk and the next 3 ingredients.
5. Pour the mixture over the shrimp and let stand for at least 15 minutes or up to 1 hour.
6. Combine fish fry mix, 2 tablespoons finely ground pork rinds, and 1 tablespoon Cajun seasoning.
7. Dredge shrimp in the fish fry mixture, shaking off excess.
8. Arrange shrimp on baking sheets.
9. Pour oil to a depth of 3 inches into a Dutch oven and heat to 325°F.
10. Fry shrimp in batches for 1 1/2 minutes on each side or until golden brown.
11. Drain shrimp on wire racks over paper towels.
12. Serve hot.
