Pork Rind Roll Ups

Ingredients

    Pork Rind Roll Ups:

    • 1 cup Southern Recipe Pork Rinds, crushed
    • 8 Pork cutlets (or boneless chops pounded thin)
    • 8 links Breakfast sausage
    • 1 Egg, beaten with 1/2 cup of water
    • 8 oz Tomato sauce (no sugar added for low carb)
    • 1/8 tsp. White pepper
    • 3/4 cup Shredded cheese

Preparation

1. Preheat oven to 325°F.

2. Sauté sausage until lightly browned.

3. Place one sausage link on each pork cutlet and roll up, tucking the ends to make a pouch.

4. Secure each roll with a toothpick.

5. Dip the rolls in beaten egg.

6. Roll the egg-coated pork rolls in crushed pork rinds.

7. Chill thoroughly for at least one hour to help them hold together.

8. Arrange the rolls in a baking dish.

9. Cover with sauce and sprinkle with cheese.

10. Bake at 325°F for 1 hour or until cooked through.

11. Optional: Wrap rolls in foil and grill, turning once, as an alternative cooking method.

12. Remove toothpicks before serving.
