

Pork Rind Style Chicken and Dumplings

Ingredients
- Southern Recipe Pork Rind Style Chicken and Dumplings:
• 1 cup Southern Recipe Hot & Spicy Pork Rinds, finely ground
• 4 lbs Chicken
• 1/2 tsp. Garlic powder
• 1/2 tsp. Dried thyme
• 2 1/2 tsp. Salt, divided
• 3/4 tsp. Pepper, divided
• 1 tsp. Chicken bouillon granules
• 2 cups Self-rising flour
• 1/2 tsp. Poultry seasoning
• 1/3 cup Shortening
• 2 tsp. Bacon drippings*
• 1 cup Milk
• Garnish: chopped fresh parsley
Preparation
1. In a Dutch oven, bring chicken, water to cover, garlic powder, thyme, 1 1/2 tsp salt, and 1/2 tsp pepper to a boil over medium heat.
2. Cover, reduce heat to medium-low, and simmer for 1 hour.
3. Remove chicken and reserve the broth.
4. Cool chicken for 30 minutes, then skin, bone, and shred.
5. Skim fat from the broth.
6. Add shredded chicken, bouillon, remaining 1 tsp salt, and 1/4 tsp pepper to the broth.
7. Return broth to a simmer.
8. In a bowl, combine flour, crushed pork rinds, and poultry seasoning.
9. Cut in shortening and bacon drippings with a pastry blender until crumbly.
10. Stir in milk until a dough forms.
11. Turn dough onto a lightly floured surface and roll to 1/8-inch thickness.
12. Cut dough into 1-inch pieces.
13. Drop dumplings, a few at a time, into simmering broth, stirring gently.
14. Cover and simmer, stirring often, for 25 minutes.
15. Garnish if desired.
*Note: 2 tsp butter plus 1/4 tsp salt may be substituted for shortening and bacon drippings.
