Warm, hearty, and packed with bold flavors, this Pork Rind Taco Soup combines seasoned beef, beans, and zesty tomatoes, finished with a crunchy kick from Hot & Spicy Southern Recipe Pork Rinds!
Ingredients
- Pork Rind Taco Soup
• 1 lb. Ground beef
• 1 Onion, diced
• 2 (15 oz) cans of Beans of your choice, not drained
• 1 (15 oz) can Corn, not drained
• 1 (10 oz) can Diced tomatoes with green chilies, not drained
• 1 (15 oz) can Tomato sauce
• 1 oz Taco seasoning
• 1 (1 oz) packet Ranch seasoning and salad dressing mix
• 1 cup water
• Your Favorite Southern Recipe Pork Rinds. We used Hot and Spicy
• Optional garnish: sour cream, diced avocado, grated cheddar cheese, sliced green onion; fresh cilantro.
Preparation
1. Brown the ground beef and onion in a large pot over medium-high heat. Drain off the fat.
2. Add the remaining ingredients to the pot. Bring the mixture to a boil, then reduce the heat to low. Simmer gently, uncovered, for 30-45 minutes, stirring occasionally.
3. Ladle into bowls and garnish with pork rinds and other toppings of choice.
