Pork Rind Cheddar Cheese Grits

Creamy cheese grits blended with crispy pork rind pieces for a comforting side with a delightful crunch.
Ingredients
- Pork Rind Topped Cheddar Cheese Grits Casserole:
• 1/4 cup finely ground Southern Recipe Original Pork Rinds
• 4 cups Milk
• 1/4 cup Butter
• 1 cup uncooked quick-cooking Grits
• 1 large Egg, lightly beaten
• 2 cups (8 oz.) shredded Cheddar cheese
• 1 tsp. Salt
• 1/2 tsp. Pepper
• 1/4 cup grated Parmesan cheese
Preparation
1. Preheat oven to 350 °F.
2. In a large saucepan over medium-high heat, bring milk just to a boil.
3. Gradually whisk in butter and grits.
4. Reduce heat and simmer, whisking constantly, for 5 to 7 minutes or until grits are cooked.
5. Remove from heat.
6. Stir in egg and the next 3 ingredients.
7. Pour mixture into a lightly greased 11 x 7-inch baking dish.
8. Sprinkle grated Parmesan cheese and crushed pork rinds over the top.
9. Cover and bake at 350 °F for 35 to 40 minutes, or until set.
10. Serve immediately.
