Pork Rind Stuffed Meatloaf

Classic meatloaf stuffed with cheese and crushed pork rinds, delivering juicy tenderness with a crispy surprise inside.

Ingredients

    • 1/2 cup Southern Recipe Original Pork Rinds finely, ground
    • 1 Tbsp. Butter
    • 3 Tbsp. Tomato paste
    • 1/3 cup Ketchup
    • 1 Tbsp. Ketchup
    • 3 Celery finely, chopped
    • 1/2 Large onion, diced
    • 2 lbs. Lean beef, ground
    • 2 Tbsp. Worcestershire sauce divided
    • 2 tsp. Creole seasoning
    • 1 tsp. Greek seasoning
    • 1 tsp. Garlic powder
    • 2 large Eggs lightly, beaten
    • 1 can (8 oz.) Tomato sauce

Preparation

1. Melt butter in a medium nonstick skillet over medium heat.
2. Add celery and Large onion; sauté for 7 minutes or until just tender.
3. In a large bowl, combine celery mixture, ground beef, 1 tablespoon Worcestershire sauce, Southern Recipe Original Pork Rinds finely, and the next 5 ingredients.
4. Shape mixture into a 10 x 5-inch loaf.
5. Place loaf on a lightly greased broiler rack set inside an aluminum foil-lined broiler pan.
6. Bake at 350°F for 45 minutes.
7. In a bowl, stir together remaining 1 tablespoon Worcestershire sauce, tomato sauce, tomato paste, and 1 tablespoon ketchup.
8. Pour sauce evenly over the meatloaf.
9. Bake for an additional 10–15 minutes, or until no longer pink in the center.
10. Let stand for 10 minutes before slicing and serving.
