Did you know October is National Pork Month? Hey, we love celebrating meat holidays … especially ones that are near and dear to our hearts. And there’s nothing nearer to pork than our crunchy pork rinds.
Pork Fact: eating pork dates to 1490 B.C. when China domesticated pigs. It’s not a far stretch to think that rinds were tried about that time as well.
In honor of “Pork-tober,” let’s double down on a recipe made especially for this month: Pork Rind Stuffed Pork Chop Bombs. Take stuffing made from Southern Recipe Pork Rinds, stuff it inside a pork chop and as an extra kick, use this recipe to bread the outside of the chop with – you guessed it – pork rinds! It’s a triple treat!

Bacon. For many, just saying the word bacon brings tears of joy. It’s no wonder there’s a special National Bacon Day (well, truth be told, every day could be “bacon day”).
From chocolate dipped bacon and Cheesy Bacon Popcorn to Bacon Banana Bread and Bacon Oatmeal, this crunchy treat can be eaten almost everywhere.
Almost. Try pulling it out of your pocket at a ball game on an 80-degree day.

1 tbsp. olive oil
8 oz. ground beef
1 tsp. creole seasoning
½ tsp. chili powder
½ tsp. cumin
salt and pepper
8 oz. block cheddar cheese
½ cup shredded Monterey Jack cheese
½ cup canned diced tomatoes
¼ cup canned chopped green chiles
¼ cup of salsa verde
Heat the olive oil in a sauce pan over medium heat and add in ground beef and seasonings. Cook until browned and drain the excess fat. Add block cheddar cheese into a saucepan, stirring until it melts. Add in Monterey Jack cheese, tomatoes, chilies and salsa. Stir in ground beef and heat for a few minutes.
