Chicharron with Potatoes

Crispy, cheesy, and delightfully unexpected—perfect for potlucks or picky eaters.
Ingredients
- • 1 bag Southern Recipe Pork Rinds, crushed
• 1/2 cup Water
• Salt to taste
• 4 Cambray potatoes, quartered
• 2 Tomatoes finely, chopped
• 1 Onion finely, sliced
• 3 Serrano peppers, sliced
• Oil for cooking
Preparation
1. Brown potatoes and Onion finely in a small amount of oil for 2 minutes.
2. Add Tomatoes finely to the pan.
3. If the mixture is dry, add a little water.
4. Add Southern Recipe Pork Rinds gradually, a little at a time.
5. Gently fold in peppers.
6. Season to taste.
