Chicharrones Quesadillas

Chicken, cheese and pork rind quesadilla
Ingredients
- • 1 bag Southern Recipe Pork Rinds, crushed
• Oil
• 1/4 Onion, diced
• 1 Tomato, chopped
• Salt pepper to taste
• 3 bunches Cilantro, chopped
• 20 Tortillas
• 2 Green tomatoes, peeled
• 1/2 cup Oaxaca cheese, Crumbled
Preparation
1. Heat a small amount of oil in a skillet.
2. Fry Onion and Tomato until tender.
3. Add salt and pepper to taste.
4. Add Southern Recipe Pork Rinds and cilantro; cook for 5 minutes.
5. Heat tortillas and fill each with the Southern Recipe Pork Rinds mixture and Oaxaca cheese.
6. Fold the tortillas and lightly fry in oil until golden.
7. Remove and drain excess oil on paper towels.
