Crunchy Cream Cheese Rolls

This recipe brings heat, crunch, and a dose of down-home deliciousness.

Ingredients

    Crunchy Cream Cheese Rolls:

    • 2 cups Southern Recipe Pork Rinds, crushed
    • 2 Tbsp. Cilantro, chopped
    • 1/4 tsp. Lime juice
    • 1/2 lbs. Cream cheese at room temperature
    • 1 Avocado
    • 1 Tbsp. Onion, finely chopped
    • 1 Serrano chile, finely chopped
    • Salt to taste

Preparation

1. Place Cream cheese at room temperature between 2 sheets of parchment paper.
2. Using a rolling pin, roll the Cream cheese at room temperature into a rectangle about 6 inches by 8 inches and 1/2 inch thick.
3. Remove the top sheet of parchment paper.
4. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
5. Mash the avocado until mostly smooth, leaving some small chunks for texture.
6. Stir in cilantro, Onion finely, chile, lime juice, and salt.
7. Spread the avocado mixture evenly over the Cream cheese at room temperature.
8. Using the bottom sheet of parchment paper, roll up the Cream cheese at room temperature into a log.
9. Coat the roll completely with crushed Southern Recipe Pork Rinds.
10. Cover lightly with plastic wrap and chill in the refrigerator for 15 minutes before serving with crackers.
11. The roll can be made in advance and refrigerated for 6–8 hours.
12. Before serving, set out at room temperature for 30 minutes.
