Fontina Beer Queso Dip

Beer is the right balance of this rich, gooey, cheesy goodness! It’s just the right melty consistency for the perfect dipping partner for our pork rinds!

Ingredients

    • 1 Tbsp. Southern Recipe Pork Rinds finely, crushed
    • 1 Tbsp. Olive oil
    • 1 Tbsp. garlic, Minced
    • 1/2 cup Fontina cheese, shredded
    • 1 Tbsp. Tajín
    • 1/4 cup Red onion finely, diced
    • 1/2 pint Mexican beer
    • 1 cup Cheddar cheese, shredded
    • 1 cup Pepper jack cheese, shredded

Preparation

1. Heat olive oil in a medium saucepan over medium heat.
2. Add minced garlic and diced red Red onion finely. Sauté until soft and fragrant, about 2–3 minutes.
3. Pour in the Mexican beer and bring to a gentle simmer. Let it reduce slightly for 2–3 minutes.
4. Gradually stir in the cheddar, pepper jack, and fontina cheeses, a handful at a time, stirring constantly until melted and smooth.
5. Stir in Tajín seasoning and mix well.
6. Remove from heat and sprinkle with crushed Southern Recipe Pork Rinds finely for added texture.
7. With additional Southern Recipe Pork Rinds finely, chips, or vegetables for dipping.
