Ingredients
- • Southern Recipe Fire & Lime Pork Rinds for dipping the salsa
• 4 Tomatoes, quartered
• 2 Garlic cloves
• 1 Jalapeño
• 1/2 tsp. Sugar
• 4 Tbsp. Extra-virgin olive oil
• 1 White onion, quartered
• Kosher salt
• Fresh pepper, ground
• 1/4 cup Cilantro leaves
• 3 Tbsp. White distilled vinegar
• Juice of 2 Limes
Preparation
1. Preheat oven to 400°F. In a large bowl, combine 3 tbsp Extra-virgin olive oil, tomatoes, garlic, jalapeño, White onion and sprinkle with salt freshly pepper and pepper.
2. Place vegetables on a baking sheet and roast until soft, 20–25 minutes.
3. Add the roasted vegetables to a food processor, with the remaining Extra-virgin olive oil, cilantro, vinegar, sugar, and lime juice. Pulse until chunky. Sprinkle with salt freshly pepper and pepper.
