Ingredients

    • 3/4 cup Southern Recipe Cracklins
    • Butter
    • 2 cups Buttermilk
    • 1 tsp. Baking powder
    • 1 tsp. Baking soda
    • 1 tsp. Salt
    • 2 to 3 tsp. Bacon drippings or vegetable oil
    • 1 large Egg
    • 1 cup White cornmeal

Preparation

1. Coat the bottom and sides of a 10-inch cast-iron skillet with bacon drippings.
2. Heat the skillet in a 450°F oven for 10 minutes.
3. In a bowl, whisk together buttermilk and egg.
4. Add cornmeal and Southern Recipe Cracklins, stirring well.
5. Stir in baking powder, baking soda, and salt.
6. Pour the batter into the hot skillet.
7. Bake at 450°F for 15 minutes.
