Low Carb Guac Toast with Pork Rinds

A low-carb, high-flavor bite that’s bound to be a family favorite dinner staple.
Ingredients
- • 2 cups Southern Recipe pork rinds finely, crushed
• 2 Tbsp. Butter, melted
• 1 Egg
• 2 Tbsp. Heavy cream
• 1/2 Tbsp. Baking powder
• Guacamole as a topper
Preparation
1. Mix all ingredients well until smooth.
2. Microwave the batter in a microwave-safe bowl for 90 seconds.
3. Let rest for 2 minutes.
4. Use a soft spatula to gently remove the toast from the bowl.
5. Fry the toast in butter until both sides are golden brown.
6. With your favorite guacamole on top.
