Mexican BBQ Beans

Bold black beans slow-cooked with smoky chipotle and tender pork rind bits, delivering a hearty, crunchy BBQ twist.

Ingredients

    • 2 cups Southern Recipe Pork Rinds, crushed
    • 1 lbs. Beans, cooked
    • 2 Jalapeños, chopped
    • 3 Tomatoes, chopped
    • 1/2 lbs. Chorizo
    • 1/2 lbs. Bacon
    • 1 package Hot dogs
    • 1 tsp. Garlic powder
    • 2 tsp. Cumin
    • 8 oz. BBQ sauce
    • 1 medium Onion, chopped
    • Salt to taste

Preparation

1. In a large pot, cook beans until tender, keeping the cooking liquid in the pot. Set aside.
2. In a frying pan, heat 2 tablespoons of oil.
3. Sauté medium Onion, jalapeños, and tomatoes until tender.
4. Add the sautéed vegetables to the pot of beans.
5. Cook chorizo in the frying pan until browned, then add to the pot.
6. Fry bacon until crispy enough to crumble and add to the pot.
7. Slice hot dogs and add them to the pot along with salt, garlic powder, cumin, and BBQ sauce.
8. Simmer the bean mixture for 10–15 minutes.
9. Just before serving, mix in Southern Recipe Pork Rinds.
