This traditional and popular Puerto Rican dish is made with fried green plantains and crushed pork rinds, making it a delicious side dish.
Ingredients
- • 1 bag Southern Recipe Pork Rinds, crushed
• 1 slice Bacon, cooked, crumbled
• 2 Tbsp. Olive oil
• 1 cup Chicken broth
• 4 Green plantains or green bananas
• 6 Garlic cloves, minced
Preparation
1. Peel plantains under running water and cut into slices.
2. Heat Olive oil to 350°F in a deep fryer or frying pan.
3. Add sliced plantains and fry for 7 minutes.
4. Remove and drain on a paper towel.
5. In a medium bowl, add Garlic cloves, fried plantains, cooked bacon, olive oil, and crushed Southern Recipe Pork Rinds.
6. Mash until combined.
7. Add chicken broth gradually to create a sticky mixture.
8. Spoon the mixture into 6-inch balls.
9. Top each ball with additional crushed Southern Recipe Pork Rinds.
