Bananas | Chicharrones | Dessert | Pork Rinds | Side Dish
This traditional and popular Puerto Rican dish is made with fried green plantains and crushed pork rinds, making it a delicious side dish.
• 1 bag Southern Recipe Pork Rinds, crushed
• 4 green plantains or green bananas
• 6 minced garlic cloves
• 1 cup chicken broth
• 1 slice of bacon, cooked and crumbled
• 2 Tbsp olive oil
Peel plantains under running water and cut into slices.
Heat oil to350°F. in a deep fryer or frying pan.
Add sliced plantains and fry for 7 minutes. Remove and drain on a paper towel.
In a medium bowl, add garlic, fried plantains, cooked bacon, olive oil and crushed pork rinds. Mash until combined. Add chicken broth to make a sticky mixture.
Spoon the mixture into 6-inch balls and top with more pork rinds.
