Creamy, zesty lemon cheesecake with a crunchy pork rind crust that adds unexpected savory crunch to every bite.

Ingredients

    No Bakin' Lemon Cheesecake:

    • 4 oz. Southern Recipe Pork Rinds, crushed
    • 2 cups Sugar
    • 1/2 cup Sugar
    • 1/2 tsp. Vanilla
    • 1/2 stick Butter, melted
    • 1 tsp. Cinnamon
    • 1/4 tsp. Cloves, ground
    • 1/2 pkg. Lemon Jello®
    • 1 1/2 cup Heavy cream
    • 8 oz. Cream cheese room temperature

Preparation

1. Combine all ingredients for the Southern Recipe Pork Rinds crust and press into a pie tin.
2. Refrigerate the crust while preparing the filling.
3. Dissolve Jello® in 1/2 cup boiling water and set aside to cool.
4. Whip 1 1/2 cups heavy cream until stiff peaks form.
5. In a clean bowl, whip Cream cheese room temperature until fluffy.
6. Add sugar, cooled Jello®, and vanilla to the Cream cheese room temperature. Mix well.
7. Gently fold in the whipped cream.
8. Pour the filling into the prepared crust.
9. Refrigerate overnight or until set.
10. Serve chilled.
