Ingredients
- No Bakin' Lemon Cheesecake:
Crust
• 4 oz Southern Recipe Pork Rinds, crushed
• 1/2 stick Butter, melted
• 1 tsp. Cinnamon
• 1/4 tsp. Cloves, ground
• 2 cups Sugar
Filling
• 1/2 pkg. Lemon Jello® (small box)
• 1 1/2 cups Heavy cream
• 8 oz Cream cheese, room temperature
• 1/2 cup Sugar
• 1/2 tsp. Vanilla
Preparation
For your pork rind crust, combine all ingredients and press into a pie tin. Refrigerate while you make the cream cheese filling.
Dissolve Jello® in 1/2 cup boiling water. Set aside to cool.
Whip 1-1/2 cups heavy cream until stiff.
In a clean bowl whip cream cheese until fluffy. Add sugar, Jello® and vanilla and mix well.
Fold in whipped cream. Refrigerate overnight or until set.
