Peanut Butter Pork Rind Bars

Ingredients

    Peanut Butter Pork Rind Bars
    • 4 cups Southern Recipe Pork rinds, crushed into pieces
    • 1/2 cup Butter
    • 3/4 cup Peanut butter
    • 2/3 cup Powdered sugar substitute
    • 1/2 tsp Caramel extract
    • 1/4 cup Flaked coconut
    • 6 oz Sugar-free dark chocolate
    • 2 Tbsp Coconut oil

Preparation

1. Line an 8x8-inch baking pan with waxed paper.

2. In a large saucepan over medium-low heat, combine peanut butter, butter, and sweetener.

3. Stir until melted and smooth.

4. Add caramel extract and mix well.

5. Stir in crushed Southern Recipe Pork Rinds and flaked coconut until evenly coated.

6. Remove mixture from heat and press firmly into the prepared baking pan.

7. Chill in the refrigerator until firm, about 45 minutes.

8. In a heatproof bowl set over a pan of barely simmering water, melt chocolate and coconut oil together.

9. Spread melted chocolate over the chilled bars.

10. Refrigerate for 20 minutes to set the chocolate.

11. Remove bars from the pan using the waxed paper.

12. Cut into squares and serve.
