Pecan Pork Rind Cinnamon Rolls

Ingredients

    Pecan Pork Rind Cinnamon Rolls:

    • 3/4 cup Southern Recipe Pork Rinds, finely crushed
    • 5 Eggs
    • 1 1/2 tsp Baking powder
    • 5 Tbsp Sugar substitute
    • 1/4 cup Butter, unsalted
    • 2 tsp Cinnamon
    • 1/4 cup Pecans, chopped
    • 1/2 tsp Vanilla extract
    • 4 Tbsp Heavy cream
    • 1 cup Water

Preparation

Preheat the oven to 350ºF. In a medium-sized bowl, add pork rinds, eggs, baking powder, and 1 tbsp of sugar substitute. Add 1/2 cup water or more (until mixture resembles pancake batter). Combine and set aside. Add the sugar substitute and cinnamon to the melted butter, mix well, set aside.

Pour the pork rind mixture onto the middle of a baking sheet, spreading it out to make a rectangle. Place into the oven for 8-10 minutes or until mixture sets. Remove from oven and let cool for about 5 minutes.

Spread cinnamon/butter mixture over baked pork rind mixture. Roll up and cut into even pieces.

In a bowl, add the remainder of your sugar substitute and heavy cream and whisk to combine. Pour over the cinnamon rolls, sprinkle pecans on top and serve.
