Peruvian Style Pork Rind Dip

A zesty blend of aji amarillo peppers and tangy lime with crushed pork rinds for authentic Peruvian crunch and spice.

Ingredients

    • 1 bag Southern Recipe Pork Rinds for dipping
    • 2 cups Cottage cheese
    • 1/4 cup Mayonnaise
    • 2 Hard–boiled egg yolks
    • 2 Tbsp. Hot peppers or Tabasco Sauce, ground
    • 2 Tbsp. Onion, finely chopped
    • Salt & Pepper to taste
    • A few drops lemon juice

Preparation

1. Mash cottage cheese and egg yolks using a pastry blender.
2. Add mayonnaise and mix well.
3. Add peppers, onion finely, salt, pepper or Tabasco sauce, and lemon juice.
4. Beat the mixture well.
5. Serve chilled with Southern Recipe Pork Rinds for dipping as an appetizer.
