
Pork Rind and Chicken Gumbo

Hearty gumbo packed with tender chicken and pork rind bits that add a satisfying crunch and smoky depth.
Ingredients
- Pork Rind and Chicken Gumbo:
• 1/2 cup Peanut oil
• 1/2 cup All-purpose flour
• 1 cup Sweet onion, chopped
• 1 cup Green bell pepper, chopped
• 1 cup Celery, chopped
• 1 1/2 to 3 tsp. Cajun seasoning
• 2 tsp. Garlic, minced
• 3 (14 oz.) cans Chicken broth
• 1/2 lb. Andouille sausage, cut in 1/4" thick slices
• 1 cup Okra pilau
• 4 cups Chicken, cooked and chopped
• Garnish with Southern Recipe Hot & Spicy Pork Rinds
Preparation
1. Heat oil in a large Dutch oven over medium-high heat.
2. Gradually whisk in flour and cook, whisking constantly, for 5 minutes or until the flour is chocolate colored. (Do not burn the mixture.)
3. Reduce heat to medium. Stir in onion and the next 4 ingredients.
4. Cook, stirring constantly, for 3 minutes.
5. Gradually stir in chicken broth and sausage.
6. Increase heat to medium-high and bring to a boil.
7. Reduce heat to low and simmer, stirring occasionally, for 20 minutes.
8. Meanwhile, prepare Okra Pilau.
9. Stir chicken into the gumbo and cook, stirring occasionally, for 5 more minutes.
10. Serve hot with Okra Pilau.
