Pork Rind Breaded Fried Chicken

- Pork Rind Breaded Fried Chicken:
• 1 cup Southern Recipe Original Pork Rinds, crushed
• 3 lbs whole chicken, cut into pieces
• 1 tsp. salt
• 1 tsp. pepper
• 1 cup buttermilk
• 2 cups self-rising flour
• Vegetable oil (for frying)
Sprinkle chicken with salt and pepper. Place chicken in a shallow dish or zip-top plastic bag, and add buttermilk. Cover or seal, and chill at least 2 hours.
Grind pork rinds in food processor, then combine with flour.
Remove chicken from buttermilk, discarding the buttermilk. Pour oil to a depth of 1 1/2 inches in a deep skillet or Dutch oven; heat to 360°. Dredge chicken in pork rind/flour mixture. Add chicken, a few pieces at a time, to the skillet or Dutch oven.
Reduce heat to medium-low and cook chicken until lightly browned on both sides, turning frequently. Drain on paper towel.
