
Pork Rind Breaded Fried Chicken

Classic fried chicken with a golden pork rind breading for extra crunch and a bold, savory crust.
Ingredients
- Pork Rind Breaded Fried Chicken:
• 1 cup Southern Recipe Original Pork Rinds, crushed
• 3 lbs Whole chicken, cut into pieces
• 1 tsp. Salt
• 1 tsp. Pepper
• 1 cup Buttermilk
• 2 cups self-rising Flour
• Vegetable oil (for frying)
Preparation
1. Sprinkle chicken with salt and pepper.
2. Place chicken in a shallow dish or zip-top plastic bag and add buttermilk.
3. Cover or seal and chill for at least 2 hours.
4. Grind pork rinds in a food processor until finely ground.
5. Combine ground pork rinds with flour.
6. Remove chicken from buttermilk, discarding the buttermilk.
7. Pour oil to a depth of 1 1/2 inches in a deep skillet or Dutch oven.
8. Heat oil to 360 °F.
9. Dredge chicken pieces in the pork rind and flour mixture.
10. Add chicken to the hot oil a few pieces at a time.
11. Reduce heat to medium-low.
12. Cook chicken, turning frequently, until lightly browned on both sides.
13. Remove and drain on paper towels.
14. Serve hot.
