Ingredients

    • 1/2 cup Southern Recipe Hot n Spicy pork rinds, crushed
    • 1/2 cup Self-rising flour
    • 1 tsp. Sugar
    • 1/2 tsp. Salt
    • 1 cup Buttermilk
    • 1 Egg
    • 1/4 cup Cheddar cheese, shredded
    • 1 cup Yellow cornmeal
    • 1 Jalapeño finely, diced
    • 1 cup Yellow corn

Preparation

1. Preheat the oven to 400°F.
2. Mix the self-rising flour, cornmeal, sugar, salt, and crushed Southern Recipe Hot n Spicy pork rinds in a large bowl until well combined.
3. Slowly mix in the buttermilk, egg, jalapeno, corn, and cheddar cheese until fully combined. If the batter is too liquidy, let the batter sit for 5–10 minutes to thicken.
4. Scoop large spoonfuls of the batter and place on a parchment paper lined baking sheet. Bake for 10–15 minutes or until the hush puppy cakes are golden brown.
