    Pork Rind Hush Puppy Cakes

    • 1/2 cup Southern Recipe Hot n Spicy pork rinds, crushed
    • 1 cup Yellow cornmeal
    • 1/2 cup Self-rising flour
    • 1 cup Buttermilk
    • 1 Egg
    • 1 Jalapeño, finely diced
    • 1 cup Yellow corn
    • 1/4 cup Cheddar cheese, shredded
    • 1/2 tsp. Salt
    • 1 tsp. Sugar


1. Preheat the oven to 400 °F.
2. Mix the self-rising flour, cornmeal, sugar, salt, and crushed pork rinds in a large bowl until well combined.
3. Slowly mix in the buttermilk, egg, jalapeno, corn, and cheddar cheese until fully combined. If the batter is too liquidy, let the batter sit for 5-10 minutes to thicken.
4. Scoop large spoonfuls of the batter and place on a parchment paper lined baking sheet. Bake for 10-15 minutes or until the hush puppy cakes are golden brown.
