Savory eggs, sausage, and cheese baked with a pork rind crust for a protein-packed breakfast that satisfies.
Ingredients
- Pork Rind Style Breakfast Casserole:
• 1 bag Southern Recipe Pork Rinds, crumbled
• 1/2 cup Heavy cream
• 6 Eggs
• 3/4 cup Green peppers, diced
• 1/2 cup Sweet onions, diced
• 1 cup Mushrooms (or one 18 oz. can), sliced
• 1 roll Sage breakfast sausage (or substitute 2 cups of diced ham)
• 2 cups Shredded sharp cheddar cheese
• 1/4 stick Butter
• A pinch of dill
• Salt and pepper to taste
Preparation
1. Preheat oven to 375 °F.
2. In a bowl, mix eggs with heavy cream.
3. Cook meat with peppers, onions, and mushrooms until well done.
4. Butter the inside of a baking pan.
5. Add the meat mixture to the pan and pour the egg mixture over it. Add any additional desired ingredients.
6. Top the casserole with crushed pork rinds.
7. Bake for 30 minutes.
8. Remove from oven and serve hot.
