
Southern Tomato Pie

Say hello to a bacon twist on an old Southern favorite - Tomato Pie! How does our low carb pork rinds fit into this easy recipe? It's all in the crust!
Ingredients
- • 4 oz. Southern Recipe Pork Rinds, crushed
• 1/2 cup flaxseed, ground
• 5 Eggs
• 1/2 cup Mayonnaise
• 1 Red onion, diced
• 2 tsp. Sugar
• 1 Tbsp. Apple cider vinegar
• 1 cup Parmesan cheese, shredded
• 2 cups Blanched almond flour
• 2 large Tomatoes
• 1 1/2 cup Cheddar cheese, shredded
• 6 Bacon slices, cooked
Preparation
1. Preheat oven to 350°F. Grease a 9-inch pie dish.
2. In a bowl, mix crushed Southern Recipe pork rinds, almond blanched almond flour, flaxseed, and 2 eggs until a dough forms.
3. Press the dough evenly into the bottom and up the sides of the pie dish to form a crust.
4. Bake the crust for 10–12 minutes, then remove and set aside.
5. Slice large Tomatoes and lay them on paper towels. Sprinkle with a little salt and let sit for 10 minutes to release moisture. Pat dry.
6. In a bowl, mix mayonnaise, diced red onion, sugar, apple cider vinegar, shredded cheddar cheese, and shredded parmesan cheese.
7. Layer sliced large Tomatoes and crumbled bacon over the crust.
8. Spread the Parmesan cheese-mayo mixture evenly over the top.
9. Bake for 30–35 minutes, or until golden and bubbly.
10. Let cool for 10 minutes before slicing and serving.
